Affordable = $600 or less
My choices are acoustics. In no particular order;
1) Epiphone EJ 200CE
Every time I walk passed this in a store I'm fascinated by it. It has a mustache shaped bridge and a humongous jumbo body size. It seems like a very well received guitar from what I've read and it sounds very promising from videos I've seen of it played. I would like to own one but I have acoustics at this price point and can't really justify it. I'm always looking out to see it at a bargain someplace though if it ever comes up.
2) Faith Naked Neptune
I own this guitar and it's exceptional at its price point. All solid wood, my most satisfying purchase and it makes me truly happy.
3) Fender Sonoran Mini
I also own this guitar. I was after a travel guitar and this was a brand I trust at a price I like. I very much enjoy picking up a small light weight guitar and just having a soothing play.

@silvermachine - I think the porn mods won't let you get further than "Naked Neptune" ;)
I like:
- the ones with 6 strings mostly;
- but also actually the ones with 4 strings;
- would also like to dabble with one with 12 strings too...
All my stuff is from ebay (but the reason my songs sound terrible is totally down to the player)...

If you allow me to think in Sterling instead of Dollars it's very easy, and I'll choose £500 as my cut off then it's easy, because all of my guitars except one have been below that price.
American Strat - £325. Still going strong almost 40 years later. Still my main gigging (electric) guitar. Still never heard anything as sweet as the neck pick-up on this one. Still way better than I am (hence never needed to upgrade).
Martin 00015 -£500. Local newspaper bargain. Smelled of smoke, but that aside so much mojo and the easiest playing finger-picking acoustic ever. Maybe too easy. It spoils me.
Tanglewood TW60 - £175. Ebay bargain. My most used guitar. I can't believe how good this is for £175 (including case, tuner, and stand! Inbuilt electronics, too). I use it at all my gigs and never fail to get complimented on the sound. It's so good it means I no longer have to go into guitar shops. Which is a shame.

My main electric is a 1988 Squire Stratocaster (now heavily modded); made in Japan. The thing is a total workhorse. Tough as nails. Sounds good. Plays like a dream.
It was $300US new, back in '88. Probably would go for about $500 now. Yeah, I think it appreciated. Although with all the mods that mine has, I'm not sure what that would do to the value.

Damn that was a bargain! I NEED some mahogany in my life. ;D
I'm not well verses in guitars bit my latest was reasonably priced and I enjoy it well
